備長田中は、紀州備長炭と発酵を軸にした完全予約制の炭火割烹です。伊豆半島の豊かな食材を、備長炭の熾火でゆっくりと引き出し、発酵の旨味を重ねる。おまかせコースを通して、料理の向こう側にある「人」と「土地」の物語まで味わっていただきます。
BINCHO TANAKA is a by-reservation charcoal kappo grounded in Kishu binchotan and fermentation. The bounty of the Izu Peninsula is drawn out slowly over glowing charcoal, layered with the umami of fermentation. Through our omakase, guests taste not just the food, but the people and places behind every ingredient.

Many of Japan's traditional crafts are disappearing as aging makers retire without successors. In our own small way, we want to slow that tide — choosing only ingredients from makers we trust, and carrying their stories out to the world through our food.
